A few notes about this graph of the glycemic index (GI):
- GI 100 is the control (50g of table sugar). All foods are compared to this line.
- The line depicting high GI doesn’t have to go over 100 to be considered high. All high GI foods will follow the same pattern.
- The line depicting high GI is showing the relationship between blood glucose levels and time. It’s a sharp rise and decline of blood sugar levels in a short period of time.
